Veggie Tacos


RECIPE: Veggie Tacos (Lunch)

1/2 cup black beans
1 handful of fresh spinach (tear into smaller pieces)
1 pepper ( I used an orange pepper)
1/3 cup pico de gayo
1/2 small white onion
1/3 cup chopped mushrooms of any variety
3 reduced fat or fat free tortillas (whole grain is great too!)

Add the pepper, onion and mushrooms to a skillet and cook on medium-high temperature for about three minutes, add 1/4 cup water to the hot skillet and cover and turn down to medium heat (season as desired I used a pinch of salt and pepper and a sprinkle of garlic powder. Once the veggies are tender add the black beans in ( they should already be cooked but this will warm them up) Stir mixture around for another minute. Distribute the mixture to the 3 small soft tortillas evenly. Add the pico de gayo on top with the spinach and enjoy! Delicious, quick and easy lunch!

I had a glass of diet green tea with this meal and the entire thing rounded out to be about 500 calories and 10 grams of fat!
